This recipe uses 4 ripe bananas, and only 140 calories per portion (vs. 300 cal for many other recipes) and is really soft and perfectly sweet.
Banana bread is probably the easiest way to get rid of over-ripe bananas. In fact, bbc has reported a 540% increase in traffic to their banana bread recipe during the current lockdown. However, many recipes out there tend to require a lot of sugar and butter and, disappointingly, not enough bananas. I’d highly recommend trying out this recipe if you want to bake something during you lockdown but also look after your diet.
Recipe (makes 12 portions)
Time: 15 mins prep (+ 35 mins baking)
Ingredients:
4 bananas (mashed)
30g light brown sugar
20g granulated sugar
1 large egg
190g plain flour
15g unsalted butter (melted)
1 Tablespoon vanilla extract
1 tsp ground cinnamon
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
Standard loaf tin (around 23cm x 12cm)
Method
- Pre-heat oven to 175 C, and line the loaf tin with baking parchment
- Mash the bananas in a mixing bowl, and then add the egg, vanilla extract, granulated sugar, melted butter, brown sugar, and cinnamon. Stir to combine
- In a separate bowl mix together flour, baking powder, baking soda and salt. Add to the banana mixture and pour into the lined loaf tin
- Bake for 35 minutes, or until a knife inserted into the center comes out clean
- Let cool for 10-15 minutes
Note: this tastes best warm. You can always warm up a slice by reheating them in a microwave for 15 seconds
